And what a memorable evening it was! More than 300 of Miami and South Florida’s most recognized and respected wedding and event industry professionals gathered on our private beach to support Wish Upon a Wedding. This unforgettable evening included the best of everything: networking with industry leaders in the sands of Mandarin Oriental’s private beach while enjoying Asian-influenced cuisine designed by hotel Executive Chef, Didier Pouzier, all the while imbibing on delicious signature cocktails such as Lychee Martini cocktails served through the evening.

Guests also had the opportunity to partake in an exclusive mini trunk show, featuring high-end skincare products from Brazilian Plastic Surgeon Ivo Pitanguy and a sampling of select pieces from high-end jewelry designer Mariapia Buccelati. Spa Director Osa Mallo offered guests a special look into The Spa at Mandarin Oriental, Miami, which is Florida’s only five-star sanctuary of relaxation.

A special thanks to our partners who helped make the evening a complete success: Always Flowers and Events, Nuage Designs, and SFL Productions for enhancing the warm inviting ambiance of the Beach. Alain Martinez Photography and his team for brilliantly capturing the evening’s celebration. We thank Junior’s Entertainment Group for providing the South Florida rhythms of acoustical guitar, which later gave way to DJ Tony Morin with VIP Music and Sound Productions.

A royal wedding of our own ...

Although we may not have a “royal family” so to speak… we certainly have the luxury of hosting weddings of such grace and magnitude that it makes us believe in a fairytale love story from beginning to end.

I am absolutely delighted to share with you the wedding of one of Miami’s most revered and esteemed families, Loryn Schwade to Nader Panahpour, as clearly the love story of this splendid couple is inscribed in every photograph and detail of their celebration. Their storybook wedding epitomizes elegance, style and refinement. Orchestrating a wedding of this magnitude were Miami’s most revered vendors, who flawlessly executed an event that met with unparalleled success.

As seen in the attached video, the incredibly talented photographer Donna Newman captures in images the deep emotional connection that existed between not only the bride and groom and their families, but each and all of the guests in attendance as well. A special thank you to planner Melissa Davis of Melissa Davis Designs who brilliantly orchestrated all aspects of the event. The impeccable designs, inspired by the mother of the bride, the exquisite Karyn Schwade, were realized through the artistic vision of Karen Cohen, owner of Always Flowers and Events. The amazing music that kept all guests entranced and dancing into the morning hours was performed by the queen of musical entertainment, the incomparable Marcia Mitchell.

A Royal Affair at Mandarin Oriental Hyde Park, London

A royal wedding deserves a royal location from which to celebrate, and Mandarin Oriental Hyde Park was chosen last night by the Queen for a pre-wedding dinner for members of the Royal family, and for Royalty from across Europe and the Middle East.

The red carpet was rolled out on the “Royal Entrance”, exclusive to Mandarin Oriental Hyde Park, which is reserved exclusively for royal use while entering the hotel. Queen and Princess Anne embraced the oriental theme of the night and our Asian heritage with gorgeous patterned dresses. Our London landmark and ‘royal’ hotel, the Mandarin Oriental Hyde Park has long been the setting for royal visits, society balls and official engagements. Her Majesty Queen Elizabeth II and the late Princess Margaret first learned to dance in the gilded ballroom, Prince Charles and Princess Anne visited the tearooms as children and more recently, Her Majesty Queen Elizabeth II and Prince Philip were guests at Baroness Margaret Thatcher’s 80th Birthday party. Since 1889, the historic hotel has become a great British institution and a home away from home for visiting aristocracy.

Come on, let’s admit, for the most part “we” as the female population initialize, conceptualize and move forward on our ideas and visions to realize the weddings of our dreams. Without a doubt, we look for the "feedback” and guidance of our soon to be significant other, but for the most part, the wedding may very much be all about the bride. Where exactly does this leave the groom when it comes to what he might consider the party of his dreams? Enter a whole new genre of rehearsal dinners, where our guys really can have fun!

We have all seen (and slept) through it: a room with four walls, a video screen showing endless images of the couple when they were young, a head table at the front of the room and endless speeches … not anymore. Instead, picture this:

My life’s first “calling” was (and still is) art, so when creative and talented individuals are able to incorporate their art form so beautifully into a wedding, needless to say, I wish to shout it from rooftops – or in this case, a blog! Such an incredible wealth of talent can be found in Miami, and the following artists are but a few that have found a way to integrate their art and passion into wedding celebrations:

I have the distinct pleasure of knowing and working with an incredible artist and professional by the name of Tomer Avivi of Avivi Designs, who brings art and history into the wedding celebration. Tomer specializes in the art of illustrating lives. His work beautifully chronicles the couples’ progression from childhood, their family heritage – even their family tree. He also specializes in depicting the marriage contract, or Ketubah. Whereas we have all been witnesses to Ketubahs created on paper, Tomer’s newest creations are done on wood – the actual tree!

His inspiration for each art piece comes from the bride and groom’s unique story of meeting, their past and their future together. This story is then preserved through his art work. Tomer states, “From generation to generation it is a responsibility that we share our history and life story. Knowing where we are from strengthens where we are going! A wedding day is the perfect opportunity to highlight and illustrate a couple's history – and future as two stories become one and form a new family tree. Be a Voice... Take a Stand

Did you happen to read the headlines today? I do not have the heart to reiterate, or the presence of mind to understand what happened or how it happened. However, I do find this the right time and right place for all of us to Be Voice and Take a Stand!

In the life of every child, there should be at least one adult that stands as his or her mentor and hero… someone they can depend on and find as a source of love, protection and inspiration. For most, the hero is mom or dad, a grandparent or sibling. Unfortunately, there are more than 3,000 children in Miami-Dade’s foster care system who have no heroes in their lives, and whose voices go unheard every day. Voices For Children was born in 1984 to provide funds to volunteers who came together to take a stand and to help the hundreds of frightened children passing through the dependency courts daily. These volunteers and supporters were then, and remain now, the Voices for these Children.

On Saturday, February 19th, our annual Be A Voice, Take A Stand Gala will take place in our Grand Ballroom. Nearly 500 of South Florida's most influential and prominent members of the community will be joining us as we commemorate Mandarin Oriental, Miami and Swire Properties for their commitment to Voices For Children Foundation. The cocktail reception and silent auction will start at 7:30 p.m., followed by dinner and dancing at 9 p.m.

Although there may not be an opportunity for you to join us at the gala, there are still ways for you to help make a difference in the life of a child. Please, gather your friends, family, co-workers, or faith-based organization and pool your resources to help give abused and neglected children a Voice. Together you can become part of our Angel Society and keep these children from standing alone.

I started writing this blog with quite a few things in mind: the red-hot Herve Leger dress and insane Christian Dior shoes with the “oh-so-sexy” bows on the heels, both hiding away in the closet just waiting to unveil themselves on Monday evening. My mind drifted to (here is the unabashed plug) a night of being wined and dined with gourmet delicacies and fine wines in Miami’s first Five Diamond restaurant, Azul. I envisioned myself enjoying the sweeping views of our beautiful Miami sky-line and its lights reflecting on the Bay from Mandarin Oriental’s romantic Oasis Beach, all while being caressed by gentle tropical breezes. After all, what girl doesn’t want to be part of the myth and allure of romance on Valentine’s Day complete with Valrhona Chocolate and Billecarte Pink Champagne?

Then, something else crossed my mind … simply stated … LOVE. The reason we are all connected, the reason I chose my career, and the very reason we all celebrate the date of February 14th.

We journey through life searching our hearts, our souls, and our minds for a “soul mate” and friend that makes us feel complete. Through them you see your own beauty and the love you have capacity for giving. In them, you become one with yourself. A soul mate will stir your imagination, bring fruition to all your hopes, and help you to achieve your dreams. In the prophetic words of my “love guru”, Liz Gilbert in Eat Pray Love, “A soul mate touches a place in your heart deeper than you thought you were capable of reaching. They are a mirror to your own soul”. Needless to say, when we have found the person, it is indeed a reason to celebrate!

I want to dedicate this blog to all those who have found their soul mates – and through marriage and celebration have allowed me to be a part this love over the past 20 “something” years. Although thousands of names can hardly fit onto one page and within this small heart, you each remain the biggest part of my heart. Please know that I remember you, I celebrate your love, and I THANK YOU for allowing me to be a part of your lives!

Can it really be the beginning of February already? How did the first month of the year pass so quickly?? Whereas I may not be able to figure out where time went, I have a firm understanding of where the remainder of 2011 is going. According to The Knot, here are some of 2011’s top wedding trends:

Prohibition-Era Elegance: So long, Mad Men—the most stylish new show is Boardwalk Empire and brides are noticing. From dusty nudes and lace dresses for the ladies to wing-tip shoes for the men, couples are falling in love with the dapper fashion of the 1920s. And it wouldn’t feel like Prohibition without alcohol. To reinterpret the boozy nights of the Roaring ’20s, couples are serving up “moonshine” and Prohibition “bathtub gin” in their very own speakeasy bar, all while guests dance the night away—to jazz, naturally.

Happy New Year everyone! And with the start of 2011, I have some very exciting news to share about happenings and accolades for Mandarin Oriental, Miami!

Let’s start, shall we?

Within the wedding world, Grace Ormonde Wedding Style is the premiere resource for brides, planners and professionals alike; providing at the turn of a page, or click of the mouse, the world’s premiere wedding and event vendors. Wedding Style has become a “bible” for modern brides. Over the past years, Mandarin Oriental, Miami has been proud to partner with Grace as our philosophies, values, pursuit of excellence and utmost professionalism are shared.

2011 will be no exception, as I am delighted to confirm that the new issue of Grace Ormonde Wedding Style is now on newsstands and features two of Mandarin Oriental, Miami’s Executive Pastry Chef Frederic Monnet’s wedding cake creations. Take a look.

Also hot off the press, our “Live the Experience” wedding video has met with incredible acclaim. The video, as well as our hotel images and information have been proudly featured on Grace’s Platinum listing.

We extend warmest thanks to Grace and her incredible team, and look forward to many more stories in the future!

Having Your Cake and Eating it Too...

One of the most rewarding aspects of our industry is the friends and business partners that influence and grace our lives. I have had the pleasure of knowing such an individual and her family from the time she turned fifteen in a spectacular Quinces celebration. Even then, she knew how to throw a party … and has not stopped since. She has impacted the Miami event industry with her planning skills, her exquisite linens, her designs and her charm. And guess what … it doesn’t stop there.

I am delighted to blog about a very special new company that absolutely EVERYONE needs to know about (and use!) and as well re-acquaint you with the incredible woman in a dynasty of successful Paz ladies! There is a new cake in town … “The Office Cake” by Baker Street. Sarah Paz has been baking cakes since she was a child. That is because her mom, Ana Paz, of Ana Paz Cakes has served her own mother’s recipes to A list celebrities for over 30 years. Today Sarah has added a new chapter to the family tradition with her own brand of baked delicacies. Sarah states, "Our goal is to make fresh and delicious baked treats accessible to our customers, even when those last minute events pop up. We bake every morning and freeze NOTHING. Party with a Purpose!

As the holidays are upon us, I thought it would be the ideal time to share with you a recent article printed for our Mandarin Oriental Fan Letter. Following are my “Top Ten” suggestions on how to keep your parties distinctive and memorable!

1. Party with a purpose
… Identify the reason for your celebration and designate its purpose and there.

2. Establish the time frame
Whether your preference is for a formal dinner, relaxed reception style with lounge, or luncheon, designate the time of day most suited to the tone of the party and your guests.

3. Identify your guest profile and guest count
By knowing your guests and estimated guest count, it dictates where, when, and how your proceed with the party.

4. Location, location, location
We are so fortunate here at MOMIA, as we have a multitude of venues from casual beach settings, to elegant poolside venues, luscious lawns and beautiful ballrooms!

5. Budget
It’s not a dirty word … everyone’s gotta have one!

6. Menu
I’m the Director of Social Catering … so I’m entitled to be a little biased in saying that NOTHING is more important than your food selection.

7. Unless it is the Beverage selection

8. Music
Music makes the party and gets guests moving. Decide on your entertainment (whether band, DJ, or musical performances) and let the professionals give you guidance as to what works best.

9. Find a way to make your party distinctive
Whether through party favors, décor, food or specialty drinks, your guests should know that YOU planned the party.

10. Allow yourself to HAVE FUN!

Through the inception and the event itself … everyone is looking to you to set the tone. If you are not relaxed and having fun, neither will they!

It's All About the Kids!

This past Saturday, Mandarin Oriental, Miami was fortunate to be a part of the third annual It's All About the Kids event benefiting St. Jude Children's Research Hospital. The evening was a complete success and guests had the opportunity to mingle with celebrities, enjoy an exquisite one of a kind “Cirque du Soleil” inspired menu, and bid on amazing silent auction items. Live music from The Bergman Pazs Band had guests dancing the night away while talented television and radio personalities Pamela Silva Conde and Alberto Sardiñas hosted this remarkable event.

A very special thanks goes out to Paola Cassana, Event Specialist for ALSAC/St. Jude Children’s Hospital, and Lourdes-Soler Milian of Lourdes Milian Productions, for putting together such an incredible and memorable event!

I find myself surrounded by many dear friends and family that have either just given birth, or are preparing to do so within a few short weeks. The excitement, the anticipation, and the thrill of welcoming something that changes your normal way of thinking is a concept to which I can completely relate.

Whereas I am not having another child, I have indeed been part of the development and birth of a new idea and direction for social catering. A concept that goes beyond a bride clicking her way through a variety of images, trying to imagine what her wedding day will entail. Instead, I wanted to find a means for the couple to truly experience the love, excitement and beauty that their celebration weekend will hold.

I am delighted to announce “our new addition” to the Mandarin Oriental family, “Live the Experience”. Making A Difference

I LOVE my job! Over a career of 20 years in the events and wedding industry, I have been welcomed into the lives, hearts and memories of individuals as they celebrate some of life’s most precious celebrations. With each event, I derive a great sense of fulfillment and purpose, as I am given an opportunity to make a difference in someone’s life.

This is never so important, or so true, as when participating with Mandarin Oriental, Miami’s adoptive charity, Voices for Children Foundation. This year, on February 19, 2011, we will celebrate the 10th Anniversary of Voices for Children with their annual fund-raising gala, as well as the 10th Anniversary of Mandarin Oriental, Miami. The mission of Voices For Children is to raise funds to ensure that every abused and neglected child in Miami-Dade County has a court-appointed Guardian ad Litem and that financial assistance and other resources are available for their accompanying health, educational, and social needs. It is a LOCAL organization, and your involvement can directly affect the lives of children in this city. You too can make a difference and you too can Be A Voice by making a financial contribution, volunteering your time or becoming a Guardian Ad Litem.

What do Guardian Ad Litems (GAL) do?

• Speak up for the best interests of the child
• Gather information through regular visits with the child
• Conduct interviews with people associated with the child, such as parents, caregivers and all social and medical service providers
• Attend hearings on the child’s behalf
• Make recommendations to the judge

Who can become a GAL?

Anyone who:
• Possesses a strong desire to help children
• Demonstrates good judgment and common sense
• Exhibits good communication skills
• Provides favorable references and consents to a background check
• Completes 30 hours of training
• Is at least 19 years old

We explored some of the small details that go into making an event very unique, so now I feel it only fitting that I share with you some “over the top” ideas that can leave a lasting impression.

Imagine fireworks going off when you proclaim the words “I do”. Snowflakes gently falling around you while you embrace on the dance floor. Think confetti canons exploding with the start of the celebration, or a celebrity guest performer taking the stage. Most of all, picture an undeniable love and passion for one another that leaves an entire room breathless.

It's a Piece of Cake...

I have a delicious treat to share with you from the kitchen of our award winning Pastry Chef, Frederic Monet. His customized wedding cake designs are magnificent, however it is his impressive signature flavors and confectionary creations that keep everyone asking for seconds!

Frederic’s personal favorite, a Berry Fraisier cake, makes for the perfect summer selection. The brilliant layers of color are indicative of the season, the strawberries and raspberries are at their freshest, the cream is light and enticing and pistachio paste is blended in to give the cream a hint of “nutty” flavor. Before starting, Frederic soaks the lady fingers in Grand Marnier, infusing a light citrus flavor. Last but not least … he removes all the fat and calories before consumption (just kidding – he is a renowned pastry chef, not miracle worker!)

I hope you enjoy it as much as our brides, and our Mandarin Oriental family!

Strawberry-Raspberry Fraisier Cake

Lady Fingers

10 Egg Yolks
1 Egg
6 ½ oz Sugar
8 oz All Purpose Flour, sifted
8 Egg Whites
3 ½ oz Sugar

Mix egg yolks, egg and sugar in the mixer to ribbon stage
Fold in sifted flour
In a separate bowl, mix the egg whites and the 3 ½ oz sugar to meringue stage
Fold in meringue to egg yolk mixture
Spread mixture over parchment paper on sheet pan
Bake 350 F for 12-15 min.

Light Pastry Cream

2 Cups Milk
½ Cup Cream
4 oz Sugar
2 oz Cornstarch
1 Egg
2 Egg Yolks
Vanilla Extract
3 Cups Whipped Cream
1 Tbsp. Pistachio Paste
6 Gelatin Leaves, softened in cold water

Boil milk and cream together with vanilla extract
Mix sugar with cornstarch, egg and yolks
Temper hot milk to egg mixture
Put back into pan and cook until “pastry cream” consistency
Add pistachio paste and soften gelatin into hot pastry cream. Let it cool
Whip 3 cups of whipped cream and fold into cooled off pastry cream

Assembly

Cut lady finger into 2 pieces
Soak the bottom lady finger with some Grand-Marnier simple syrup
Put some of the light pistachio pastry cream
Add berries (strawberries / raspberries)
Pour rest of the cream on top of the berries
Add second half of lady finger over cream and berries
Soak with Grand-Marnier simple syrup
Put a thin layer of cream on top of lady fingers
Chill in refrigerator for about 1 hr.
Spread raspberry jam on top of cake and cut into squares with a sharp knife

I am often asked what can be done to differentiate one event from another. With literally millions of products at your disposal via the internet, boutiques and magazines, my response to this question is, make it personal and focus on the details. I would like to share with you the work and names of some professionals that can assist you with incorporating exceptional elements into your weddings and event.

I recently had the pleasure of meeting an incredible artist and professional by the name of Tomer Avivi of Avivi Designs. Tomer specializes in the art of illustrating lives. His work beautifully chronicles the couples’ progression from childhood, their meeting and marriage. His highly individualized Ketubas, unique Simcha chairs, as well as furniture and keepsakes, illustrate life’s most precious moments captured forever.

Talk about making a first impression? The impeccable hosts of a recent celebration in our signature restaurant, Azul, brilliantly captured the joie de vivre of their guest of honor by getting personal with her favorite things. An incredible impression was made and set the tone for the event as attendees enjoyed Caviar and Rose Champagne presented in a “very cool” way. Miami’s “So Cool Events” (www.socoolevents.com) customized an ice sculpture in which the guest of honor’s favorite flowers were frozen and beautifully displayed.

Let’s “table” another discussion. For any given event, a great deal of time is spent dining and mingling while seated. With so many means available to convey your personality and style, the tablescape becomes a perfect forum to “detail” your celebration. As depicted, menu cards not only outlined the delectable cuisine, but were individualized to each guest. Further, the guest of honor’s passion for chocolate was inventively incorporated into the event through the use of monogrammed treats with her astrological sign. These delicious confections were offered tableside, as well as beautifully presented as favors. Playing Hard to Get

Some of my summertime favorites are by no means the exception … however they are well worth the pursuit and special order. I wanted to share with you some of these personal favorites which are beautiful, distinctive, and memorable ways to enhance your special occasions. They are perfect luxuries that can be enjoyed not just during the summer months, but throughout the year, and guaranteed to have your guests’ curiosities piqued, as well, tickled pink!

Charbonnel et Walker: These exquisite truffles are made in the Charbonnel et Walker facilities in Royal Tunbridge Wells from the finest ingredients. Butter is folded into melted milk chocolate and alcohol is added such as decadent Marc de Champagne. The mixture is whisked to form a thick ganache and the truffles are then surrounded by a coating of fine chocolate and lightly dusted in icing sugar. The truffles are hand-placed in paper cups, and then into beautiful cylindrical packaging with gold detailing and finished in-store with a perfectly positioned bow. The definition of “grace” … elegance, refinement and style. My reference, in this particular context, is not to the word but the person. Mandarin Oriental, Miami recently had the distinct honor of hosting a book signing for Grace Ormonde’s “being in love never goes out of style”.

It was an inspirational evening in which we, as a wedding industry, celebrated the work of a leader and visionary. Ten years of extraordinary weddings, innovative décor, wedding cakes, culinary arts, and more over, the art of being in love are chronicled and beautifully documented in “being in love never goes out of style”. Not just a planning guide, it is a resource and must-have for planners, brides, as well as wedding professionals.

We extend congratulations to Grace on the success of yet another trend setting publication, and a special thanks to our outstanding local professionals, as without their support and assistance, the night would not have been possible, or nearly as memorable:

New wedding trends

2010 promises to be an exciting year and many have asked what is to be expected in terms of wedding trends and expectations. I am delighted to share with you a small sampling of what we have seen so far, and what I know will just keep getting better.

In light of our transitional economy, we have seen a trend developing among brides to create “comfortable gatherings” for friends and family rather than formal and once traditional celebrations. Brides and planners alike are looking to eclectic décor ideas that emulate home furnishings that evoke an urban renewal. Sleek lines and metallic colors softened and juxtaposed with earth tones. It provides a stark contrast to traditional white weddings of the past, but is absolutely fitting at a time when our world’s focus is innovation through preservation.

We are also seeing a “hip” approach to classic home fetes of the 60's and 70’s where entertaining and parties were intimate, creative, yet casual. Bridal fashions and tuxedos with tailored fashions inspired by TV’s Mad Men, and a revival of simple and elegant…with an attitude.

Perhaps my favorite décor embraces the bohemian chic and joie de vive. The décor sees an explosion and abundance of color through rich tones, patterning and ambient lighting. Flowing gowns of airy organza contrasting to the colorful and eclectic palette of the surroundings.

Mandarin Oriental, Miami has seen a shift in food trends as well. We find the bride and groom focusing on varieties of food stations rather than plated presentations, allowing their wedding guests to mingle while enjoying fare reflective of their preferences and personalities, no matter the décor.

With so much attention focused on the bride and wedding day details, I thought it might be fitting to shift the spotlight to the co-star of the marriage … our groom. I am delighted to feature some wonderful ideas that encourage you to share the excitement of the wedding day. They are simple, but unforgettable touches that will, no doubt, remind him how very special you are, but also communicate the measures of your love.

Breakfast in bed: How many times have we heard the old adage that the way to a man’s heart is through his stomach? If this rings true in your relationship, then begin his morning with a wonderful surprise that includes his breakfast favorites. You will have him eating his heart out!

Love note: Take time to prepare a letter to your soon-to-be husband. Express to him in words what your exchange of vows and relationship mean to you. Perhaps you would like to share with him the butterflies and exhilaration of seeing him waiting for you at the end of the aisle or the moment you are pronounced husband and wife. The note could arrive “special delivery” with breakfast, or in the hands of a trusted friend or family member. In this day and age, if you are unable to write a note … text him!

Pre-nuptial pampering: What guy doesn’t want and appreciate being pampered? Allow him to fill the morning hours with relaxation by scheduling a massage, manicure or perhaps a professional shave.

Get him to the church on time: Begin your lives together with the gift of time. A watch or time piece make the perfect grooms gift. And just think of all the romantic notes that could complement the package … “counting the hours and minutes,” “until the end of time” etc.

Yelp Spice Trade Event at Mandarin Oriental, Miami

We had the distinct pleasure of hosting Yelp Miami’s first open event! Over 600 yelpers, an exquisite fire dancer, belly dancers, a 6ft. sand-fire castle, a champagne ice bar and more than 20 sponsors convened on Mandarin Oriental, Miami's private 20,000 sq. ft. white sand beach overlooking Miami’s glittering skyline. Apart from an entertaining and incredible evening, the event raised over $1,000 for the local charity, Women of Tomorrow.

Special thanks to Maria Arguello, of Yelp, and Jourden Binder, Manager Partner of The Workshop, whose Artisan Brands is the first and only artisanal distilled spirits distributor in Florida. They brought some of their much loved spirits to help liven up the festivities including Gran Sierpe Pisco, Ron Cartavio rum, Nicholas Gin and Touch Vodka. A bow to Johnny Starman, with Sentinels of Sand, as well as Mitchell Berman at Miami Henna and the many vendors that contributed to the event’s complete success!

Once inside I explored my surroundings a bit and went straight for the Mandarin Oriental area. They had four dumplings, each being more awesome than the next. It started with pork, then veggies (filled with edamame), chicken and last but not least, the shrimp dumplings, which were one of my favorite pieces of food of the evening. Spectacular Showcase at The Wedding Salon in NYC

I just returned from New York, where Mandarin Oriental, Miami, Mandarin Oriental Riviera Maya, and Mandarin Oriental, New York had the pleasure of participating in The Wedding Salon. The Wedding Salon is a luxury bridal event designed to showcase the best professionals within the wedding industry. This past show, hosted at the Roosevelt Hotel in New York City, attracted more than 3,000 guests for a Winter Wonderland bridal fantasy.

We were delighted to be a part of an event that featured trendsetting tabletop designs, including Mandarin Oriental’s winter wonderland design created by renowned New York designer, Frank Alexander.

Leading entertainment and wedding expert David Tutera was in attendance to unveil his latest elegant bridal fashions.

Mandarin Oriental, Miami was delighted to partner with one of South Florida’s premiere entertainment and planning resources, Cheryl Beitler, of the Zanadu Group, who provided elegant ballerinas that floated down the runway scattering rose petals before David and the models made their debut. And of course the topping on the cake was meeting celebrity cake maker Sylvia Weinstock, on hand to display some of her most spectacular and delectable creations.

Brilliant Britto Weddings & Events Exposition!

Allow me to begin by saying that I am honored to be a part of an incredible industry and group of professionals in South Florida. As a planner and wedding specialist, I have coordinated, and been involved with a myriad of events that may be termed eye catching, innovative and creative … however none to date have compared with the Signature Britto Wedding and Events exposition we recently hosted.

At the direction of Posh Event Creations, Miami’s premiere floral, entertainment and décor specialists showcased Britto’s innovative artwork via customized table centerpieces, lounge décor and bar designs. Personalizing Your Wedding

A wedding is all about getting personal! At Mandarin Oriental, Miami we work diligently with our couples to ensure their preferences and personal styles are reflected in “moments of delight” throughout the entirety of the event. I want to share with you some wonderful ways in which couples have “branded” their wedding ceremonies on our Oasis Beach and allowed their personalities to shine through.

Our Oasis Beach ceremonies provide not just a magical setting, but the perfect venue for couples to distribute Asian slippers or personalized Havaiana sandals to their guests. It is an age old Asian tradition that guests remove their shoes before entering one’s home, as such, the Asian slippers not only fit perfectly with our hotel’s Asian heritage, but are a comfortable alternative to wearing Manolo’s or Louboutin’s on the sand. Guests are welcomed with a “shoe check” where they are able to sit comfortably to remove their shoes, receive their favor and check their shoes at the door rather than carrying them during their time on the sand.

Beautifully monogrammed fans are also a wonderful touch and help when our Miami breezes are stilled. Another beautiful, but not so subtle touch is to create your own “Moon over Miami.” Lighting balloons provide the beach and bay with a gorgeous glow and may be covered with customized linens illuminating the couple’s monogram.

One of my personal favorites is customized sand sculptures by local artist Johnny Starman with Sand Sentinels. Whether the NYC sky-line, or your own castles of love, they never cease to amaze guests.

Last, but certainly not the least, fireworks are the epitome of finishing your vows with a “bang” and are forever memorable.

Elegant Celebrations

I find that many couples are looking for ways to contain costs and I am often asked how to plan an extravagant wedding on a not-so extravagant budget. An excellent alternative to hosting a full blown dinner celebration is for the bride and groom to create an alternative celebration.

Start by choosing the right venue! For instance, Mandarin Oriental’s Oasis Beach requires very little enhancement in terms of décor or lighting. The ambiance is the epitome of Miami chic and highlights the entire city skyline. Very little is required aside from cocktail table accents and personal flowers.

Customize a menu based upon a three hour celebration rather than a lengthy seated affair. Recognize that there is nothing more important than having those you love surrounding you for the exchange of vows and the celebration that follows. By hosting an intimate cocktail reception, featuring passed hors d’oeuvres and stations, it allows guests to really have a chance to mingle and interact as opposed to being seated for two hours during a dinner service. Aside from the cost savings on the food and beverage, this will have a flow through affect with hours required for the musicians as well as space usage at some venues.

Without compromising yours and your guests’ experiences, you are able to create a memorable and elegant celebration at a fraction of the cost.

Taking the worries out of selecting your menu

I must share with you that over the past twenty years, nothing seems to strike as much fear in the hearts and minds of couples as when the words–let’s make your menu selection are spoken. My enthusiasm is met with an eerie silence, and I have grown to expect the proverbial “deer in the headlight” reaction. Well, “dears”–relax, because with some guidance it can be FUN and simple!

The venue or caterer you choose will most likely have a “Wedding Package” put together that outlines menu suggestions and pricing estimates. The package basics typically include choices for your butler passed hors d’oeuvres, the dinner service or buffet options, along with information pertaining to the bar and beverage service through the event.

Mandarin Oriental, Miami’s wedding package is the collaborative effort of our Executive Chef, Sous Chef, Banquet Chef, Garde Manger, Pastry Chef and me to present our most successful, innovative and creative menu items. It includes selections that are specific to weddings and social events and includes a fusion of multi-cultures reflective of our Asian heritage and our home in Miami. Rest assured that by listing these items, any and all selections will be received exceedingly well by your guests. This simple premise should be consistent with all wedding packages, no matter the venue or caterer. How will you know? Don’t be afraid to ask your wedding specialist to share with you who has prepared the wedding package. Are the food selections indicative of the properties best received items? Are they serviceable for the size of your wedding? If you are pleased with the overall menu selections within the package, you are then ready to begin the process of decision making.

Selecting your menu:
Although most wedding packages will begin with hors d’oeuvres selections—resist the temptation! I recommend you place these options to the side momentarily and skip directly to your choices for the entrée. Once you have made your choice of entrée, the selections for hors d’oeuvres, your starter course, even your salad—can and should be influenced by the entrée choice, as you need to strike a balance in your overall menu.

Menu selection 101:
When selecting your menu, your personal preferences and who you are should absolutely be present and reflected. However, as the host of the soiree it is your responsibility to ensure your guests’ needs are met based upon the “majority rule.” Simply ask yourself, would my choices be well received (and edible) by the majority of my guests? The bottom line is that you might love peanut butter and jelly sandwiches, but you simply cannot serve it as an entrée to 250 guests. Trust me, your guests won’t “get” it anyway. Instead, find a wonderfully fun compromise which may come in the form of PB&Js being butler passed on the dance floor with shot glasses of milk—or served as an “early morning” station with the burgers and hot dogs your fiancé adores. Chic, fashionable and reasonable!

Without having to ponder the diets of each of your guests, we frequently see the creation of a duo entrée. Mandarin Oriental, Miami’s most popular duo is inspired by our Miami and Asian heritage. The presentation consists of Ginger Glazed Beef Tenderloin paired with Miso Marinated Black Cod. Aside from taste alone, the creative presentation appeals to the vast majority of guests.

Once you have chosen your entrée—then move backwards through the dinner service to identify an intermezzo or salad, appetizer and finally the hors d’oeuvres. Your catering specialist will be invaluable with foresight and knowledge on what works best, and assist in keeping your menu balanced. Along the way, there are wonderful opportunities to infuse your personalities into the selections and presentations that will undoubtedly lead to moments of delight.
